I’m always amused when someone says Belgian Chocolate, or French Chocolate because there is no such thing…Chocolate does not grow in these countries. As you correctly pointed out it is “processed” there. Because that is the case you could actually process any cacao there and not have it at all taste like what we identify as “Belgian Chocolate” unless you processed it in the “Belgian Style”. To be accurate, one should say “Belgian Style” chocolate… which is a flavor profile…and actually could be produced anywhere. So it doesn’t necessarilly have more or less benefit than other chocolate… The benefits are derived from the cacao content, the type of bean, and the type of processing.
